Believe It or Not — Fried Salmon

1 lb fresh salmon filet, skinned  
   salt and pepper
¼ cup half and half

  1. Melt butter (about 2 tsp) in frying pan.
  2. Add 2–3 tbl chopped fresh chives to butter.
  3. Salt and pepper salmon filets on both sides.
  4. Put filet in pan and put 2–3 tbl chopped chives on top of filet.
  5. Fry about 3–4 minutes on both sides or until fish flakes.
  6. Pour ¼ cup half and half into pan and let it simmer for 2–3 minutes occasionally spooning liquid over fish.
  7. Serve with your favorite potato and vegetable.
