Fiskekaker — Fish Cakes

“Norwegian fish cakes or "Fiskekaker" as they call it in Norway has a long tradition and is one of the most popular fish dishes.”


2 lb. skin-less and boneless haddock fillets
1 – 1½ tablespoons of salt
3 tbs. potato starch
a little of ground nutmeg
a little of ground pepper
½ cup cold milk

All ingredients should be cold.

  1. Grind the fish once and then transfer to a food processor.
  2. Add salt, potato starch, nutmeg and pepper.
  3. Process a few seconds until smooth. (Don't overdo!)
  4. Gradually add the milk as you continue processing carefully.
  5. Make medium size round cakes.
  6. Fry in browned butter about 2 minutes each side.
